Ingredients

  • 4 eggs, slightly beaten with a fork
  • 6 Tbsp granulated sugar
  • 2 tsp vanilla
  • dash of salt
  • 4 Cups milk (one of the 4 should be evaporated milk

Preparation

Step 1

Preheat oven to 325 degrees or a bit lower.

Stir all ingredients in bowl together to mix well, but do not beat (spoon)

Set 8 pyrex custard cups in a baking pan, for instance a large oblong baking pan.

Pour custard through a fine strainer into cups and don't worry about egg white you're straining out. (Part of "secret.")

Sprinkle tops generously with ground nutmeg. Pour very hot water from the faucet into pan 2/3 of the way up sides of custard cups.

Bake 35-40 minutes. Remove from oven when silver knife inserted in center comes out ALMOST clean. Remove from water. Cool 1/2 hour before refrigerating.
