Ingredients
- Lean Fish:
- 1 1/2 lb. lean fish fillets or pan dressed fish
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 egg
- 1 tbsp. water
- 1/2 cup flour, cornmeal, dry bread crumbs or grated Parmesan cheese
- Vegetable oil
- flounder, halibut, cod, grouper, orange roughy

Step 1
If fish fillets are large, cut into 6 serving pieces. Sprinkle both sides of fish with salt and pepper. Beat egg and water until blended. Dip fish into egg, then coat with flour.
Heat oil (1/8 inch) in 10 inch skillet until hot. Fry fish in hot oil over medium heat 6-10 minutes, carefully turning once until fish flakes easily with fork and is brown on both sides. Drain on paper towels.
6 servings: 195 calories per serving.
