Ingredients

  • 4 tsp grated fresh ginger
  • 16 drummettes
  • salt and pepper to taste
  • 3 cups coarsly chopped walnuts
  • 1/2 cup bread crumbs
  • 1 1/2 cup flour
  • 6 eggs lightly beaten
  • 15 oz sweet corn
  • 6 tomatoes
  • 2 avocados cubed
  • 6 tbsp olive oil
  • 2 tbsp lime juice
  • 6 stalks mint chopped

Step 1

1. Heat oven to 350 degrees. Rub drummettes with salt, pepper and ginger. Mix together walnuts and bread crumbs.

2. Dip drummettes in flour, then egg, the walnut-bread crumb mixture.

3. Arrange drummettes in single layer on parchment paper-lined baking sheet; bake 20 minutes.

4. In medium size bowl, mix corn, tomatoes, onions and avocados. In separate bowl, mix olive oil and lime juice; add salt and pepper to taste, then fold into vegetables. Sprinkle with mint.
