  • 3 ¼ cups milk
  • ½ cup and 2 tsp. sugar
  • 3 strips lemon zest
  • 7 egg yolks
  • 1 egg
  • Salt
  • ½ cup flour
  • 1 – 2 tbs. vanilla
  • 3 tbs. butter

Preparation

Step 1

Slowly heat milk, 2 tbs. of the sugar, and zest on top of a double broiler. Whisk sugar, yolks, egg, and salt until thick (2-3 minutes). Sift in flour, a little at a time, and then pour in ½ the milk. Pour the egg mix into the remaining milk, and stir until thick. Reduce the heat and stir 1 minute. Remove from heat and discard the zest. Beat in vanilla and butter, 1 tbs. at a time. Cool.
