Ingredients
- 3 c. refrigerated hash brown potatoes
- 1 c. chopped green pepper, divided
- 1/3 c. chopped onion
- 1 Tbs. oil
- 18 eggs, beaten
- 2 1/3 c. chopped, cooked ham
- 1 1/4 c. chopped tomato, divided
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 1/2 c. shredded Cheddar or CoJack cheese

Step 1
Cook 3/4 c. green pepper and onion in oil over medium-high heat about 5 minutes, or until tender.
Combine potatoes, green pepper and onion mixture, ham, 1 c. tomato, salt, and pepper in large bowl; stir well. Pour mixture into lightly greased 9 x 13" pan.
Bake, uncovered, at 325° for 40 minutes or until "set." Top with remaining 1/4 c. green peppers and 1/4 c. tomato. Sprinkle evenly with cheese. Bake 5 more minutes or until cheese melts.
