Chicken in Lemon Sauce

Ingredients
- 1/4 butter
- 4 chicken breasts, halved, boned, skinned
- 2 T white wine
- 1/2 tsp grated lemon rind
- 2 T lemon juice
- salt & white pepper to taste
- 1 cup cream
- 1/3 cup grated Parmesan cheese
- 1 cup sliced mushrooms
- Lemon wedges & Parsley ~ optional

Preparation
Step 1
Melt butter in large skillet. Saute chicken about 10 minutes or until brown and tender. Remove chicken to an ovenproof dish. Drain margarine from skillet, add wine, lemon peel and juice. Cook 1 minute, add salt & pepper. Slowly add cream, stirring constantly; heat but do not boil. Pour over chicken. Sprinkle with Parmesan & mushrooms. Set oven to broil. Place dish 6 inches from heat. Broil until lightly browned. Garnish with lemon & parsley.
