Ingredients

  • 10 – 12 12inch long skewers, soaked 15 minutes in water to prevent water
  • 1 lb. fresh large shrimp, peeled, washed, pat dried
  • 6 hot Italian sausages, few diagonal slits in each
  • 2 tbs. olive oil
  • 4 garlic cloves, minced
  • 1 tbs. paprika
  • 1 ½ tsp. dried oregano or thyme
  • Salt and pepper
  • ½ tsp. cayenne pepper
  • 4 skinless, boneless chicken breasts
  • ½ cup chopped parsley

Stir together the oil and spices. Thread the shrimp on each skewer, leaving a small space in between. Brush the chicken and shrimp with the spices. Brush the chicken and shrimp with the spices. Place the chicken, sausage, and shrimp on the grill. Grill until cooked. As each chicken breast and sausage is cooked, slice into large chunks. Arrange on a platter and sprinkle with parsley.
