Grilled Pork Tenderloin with Fresh Fruit Salsa 1 Picture

Ingredients

  • Marinade:
  • 4 12oz pork tenderloins
  • 1/2 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 1/2 cup dark rum
  • 1 medium onion, thinly sliced
  • 6 garlic cloves minced (1 1/2 tsp)
  • 2 tsp oregano
  • 2 tsp ground cumin
  • 1 tsp salt
  • 1 whole bay leaf
  • 1/2 tsp groound black pepper
  • Fresh Fruit Salsa:
  • 1 small red onion, chopped
  • 1/4 cup fresh lime juice
  • 1 1/2 cup peeled, chopped pineapple, mango or peach
  • 1 small red pepper chopped
  • 1/4 cup cilantro chopped
  • 1 garlic clove minced (1/4 tsp)
  • 1/4 cup fresh orange juice
  • 1 jalapeno pepper seeded and finely chopped
  • 1/2 tsp ground chipotle pepper
  • 1/8-1/4tsp salt to taste
  • 1/4-1/2 tsp ground pepper

Preparation

Step 1

Rinse the tenderloins and pat dry. Combine the marinade ingredients and coat tenderloins. Marinade overnight in the refrigerator for 8 hours.
Grill 8-10 minutes per side or to a temperature of 155 degrees. Let rest 5-10 minutes. Slice and serve with salsa.

If unable to gril, sear the tenderloins and bake in a 425 degree oven for 15-20 minutes.

Combine salsa ingredients and refrigerate for at least one hour.
