Ingredients

  • 1 small onion
  • 1 large stalk celery
  • 1/2 lb bulk Italian sausage
  • 4 cups herb-seasoned stuffing
  • 1 cup chicken or vegetable broth
  • 6 lb bone-in turkey breast
  • 1 1/2 tbsp oil
  • 1 tsp dried poultry seasoning
  • 1 tsp dried thyme

Preparation

Step 1

1. Preheat oven to 425°F. Grease 13- x 9-inch roasting pan. Chop onion and celery. In large skillet over high heat, cook sausage, onion and celery, breaking sausage into tiny pieces, until sausage is cooked through, about 8 minutes. Add stuffing and broth. Stir until combined and stuffing cubes are moistened.

2. Rinse turkey breast and pat dry. Stuff turkey cavity. Mound remaining stuffing in center of pan. Place turkey on top so that it stands breast facing up. Rub turkey with oil. Sprinkle poultry seasoning and thyme on turkey. Cover exposed stuffing with strips of aluminum foil, pressing foil to touch and cover stuffing.

3. Roast turkey until internal temperature reaches 160°F in thickest part of breast, about 2 hours. Baste, then loosely cover top of breast with foil after 1 hour of cooking. Uncover during last 15 minutes of cooking. Allow to rest 15 minutes before carving.
