Lace Cookies

Another great annual Christmas cookie that are usually one of the first to go.

Ingredients
- 1 cup melted butter
- 1 1/2 cup brown sugar
- 2 1/4 cup rolled oats
- 1/2 tsp. salt
- 1 tbsp. molasses
- 3 tbsp. flour
- 1 egg slightly beaten
- 1 tsp. vanilla

Step 1
In large electric mixing bowl at low speed, combine butter, sugar, molasses and vanilla extract. Add egg.
In separate bowl, mix together oats, flour and salt.
Add dry mixture into wet mixture. Will be very wet when combined. Let stand about 30 minutes at room tempreture which will allow the oats to soak up some of the liquids. Than transfer into storage bowl and refrigerate overnight or longer. THis I have found is critical as it aids in shaping to cookies when they cook.
Preheat oven to 350 degrees.
remove dough from freezer and with teaspoon, create 1 inch balls of dough- drop onto ungreased cookie sheet. Bake for 8-10 minutes or until golden brown.
Note** these cookies tend to spread, and by refrigerating the dough you prevent the cookie from spreading and becoming too brittle. Over cooked cookies are burned and not soft. The perfect cookie should be soft, lightly browned on edges and have a bit of a core in the center-
