Ingredients
- 3 lbs. Granny Smith apples, peeled, cored, and sliced
- 1 tbs. lemon juice
- 1 tsp. lemon juice
- ½ cup packed light brown sugar
- 2 tsp. cinnamon
- 6 ½ tbs. butter, chilled
- 2 cups flour
- 3 tbs. sugar
- 1 tbs. baking powder
- ¾ cup and 1 tbs. heavy cream

Toss apples, juice, zest, sugar, and cinnamon. Lightly butter a deep dish pie pan. Spoon in apples, and dot with 1 ½ tbs butter. Sift the flour, sugar, and powder together. Cut in 5 tbs. butter into small bits, cut into flour until it resembles coarse meal. Add ¾ cup cream, quickly stir into mixture and knead lightly until smooth. Preheat oven to 425 degrees. Roll dough to ¼ inch and trim into a circular shape, and roll out ½ inch larger than the pan. Cut a small vent in the center. Place the crust over the apples, do not press the dough to the pan edge. Brush top with remaining 1 tbs cream, bake 10 minutes and then reduce heat to 350 degrees for 35 – 40 minutes.
