Ingredients

  • 5 lbs Sierra Gold, Yukon Gold, red or russet potatoes, cut into 1 1/2in chunks.
  • 2 cups nonfat plain yogurt
  • 1/4 cup olive oil
  • 3/4 cups thinly sliced green onions
  • 1/2 cup chopped roasted garlic
  • 1/4 cup snipped fresh rosemary
  • Salt and Pepper

Preparation

Step 1

1. Bring a large pot of water to boil; add potatoes and bring to a boil again. Cook for 20 minutes or until soft when pierced with a knife; drain well.

2. Transfer to large bowl and mash until smooth. Stir in remaining ingredients.

3. Serve now or can be referigerated and used later.
