Ingredients
- 2 slices bacon, chopped
- 1/4 cup onion, chopped
- 1 egg
- 1/2 cup mayo
- 2 tsp Dijon mustard
- 1/2 tsp sugar
- 1/2 lemon, zested
- 14oz can wild salmon, checked for bones
- 1 russet potato
- 1/4 cup bread crumbs
- 2 tbsp Parmesan, grated
- Pepper
- 1/2 cup vegetable oil

Preparation
Step 1
Cook the chopped bacon in a skillet over medium heat. Remove from skillet and drain. Reserve. Cook onions in the bacon grease until soft.
In a large bowl, mix the bacon, onion, egg, mayo, mustard, sugar and lemon zest. Add the picked salmon and potato, mixing gently after each addition. For the mixture into 12 small patties.
In a shallow dish, combine the bread crumbs, Parmesan and pepper to taste. Coat each patty in the bread crumb mixture. Heat the vegetable oil over medium heat. Cook the patties in batches in the vegetable oil until golden, about 3-4 minutes per side.
