Corn and Tomato Soup

Ingredients

  • 1 Tbs. unsalted butter
  • 1 cup onions chopped
  • 2 tsp salt (divided)
  • 1 can Ro Tel diced tomtatoes, drained
  • 1 can Ro Tel diced tomatoes w/chiles, drained
  • 3 cups frozen corn
  • 14 3/4 oz. can cream corn
  • 12 oz fat free evaporated milk
  • 3 cups chicken broth
  • 1/4 tsp pepper

Preparation

Step 1

In saucepan over medium low heat melt butter. Add onions and 1 tsp salt: cook, stirring frequently until onions are soft, about 10 minutes.
Stir in remaining ingrediants and simmer for about 15 minutes so flavors can combine.
