Preparation

Step 1

1. FOR THE DOUGH: Adjust an oven rack to the middle position and heat the oven to 350°. Whisk 2 ½ cups flour, the sugar, lemon zest, baking soda, and salt together in a medium bowl. Beat the eggs and butter together in a medium bowl. Make a well in the center of the flour mixture and add the egg mixture. Stir together to form a moist and sticky dough.

2. Place one-third of the dough in a medium bowl. Add the remaining 1/3 cup flour, cutting it in with a fork until large crumbs form. Reserve for the topping. Use the bottom of a measuring cup to press the remaining dough into the bottom of a 13x9-inch baking dish, forming a ½-inch rim of dough up the sides. (If dough sticks to measuring cup, dip the bottom in flour as you work.)

3. FOR THE FILLING: Mix the jam with the flour until smooth. Toss in the berries and arrange the mixture evenly over the dough.

4. Sprinkle the reserved topping mixture evenly over the fruit and bake until golden brown, about 30 minutes. Cool 10 minutes, then cut into squares.
