Ingredients

  • 1/4 cup butter
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 large egg whites
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract (optional)
  • 2 teaspoons lemon zest
  • 2 cups all-purpose flour
  • 1/4 cup plus 2 tablespoons Spenda
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 cup light sour cream
  • 2 tablespoons lemon juice

Preparation

Step 1

1. Preheat the oven to 350 degrees. Coat a 9x5 inch loaf pan with nonstick baking spray.

2. In a large bowl, cream together the butter and sugar wih an electric mixer. With the mixer running on low speed, add the shole egg. Once combined, add the egg whites. Blend in the applesauce, extracts, if usin them both, and zest.

3. In a medium bowl, combine the flour, 3/4 cup sweetener, baking powder, and baking soda. Set aside.

4. With a large spoon or spatula, stir half the flour mixture into the creamed mixture. Stir in half the sour cream, and then repeat, gently mixing each time just to incorporate flour and sour cream. Spoon the mixture into the prepared loaf pan and smooth the surface.

5. Bake for 50 to 55 minutes or until a toothpick or a cake tester inserted into the middle of the loaf comes out clean. Place loaf pan on a wire rack. In a small bowl, whisk together the lemon juice and remaining 2 tablespoons sweetener. Brush over the loaf while it is still warm and let cool before removing from the pan.
