RR Cognac Sauced Pepper Steaks

Ingredients
- 10 - 12 oz. Steak 1.5 inches thick
- Sal
- 1 Heaping Tablespoon Coarsely Ground Black Pepper
- 2+ tablespoons Oilve Oil
- 1/2 Small Onion
- ! Large Clove Garlic
- 2 Shots of Cognac
- 3/4 Cup Beef Stock
- 1/4 Haevay cream
- 2 Tanlespoons flat leaf parsley, chopped

Preparation
Step 1
Season both sides of Steak wirth salt, then 1 side with pepper. Press the pepper on to secure
Preheat skillet on med. with 2 tblspn. olive oil. Add the steaks peppered side down and cook them for 4 min. ( med. to well.) Tun and cook 3 minutes longer...too long if ytou like it rare. Remove steaks and cover to keep warm.
Returnt he skillet to the heat and put in more olive oil. Add onion, garlic and a little salt. Cook Stirring frequently, for 3-4 minutes.
Remove skillet from het, add cognac and return to burner. Let it flame up. Once the flame buys down, add the stock and cream trhen turn the heat up to high and cook untilo it's slightly thickened. Add the Parsley to the sauce them pur it over the steaks.
