LENTIL****French Lentil Rice Soup

This is good and tasty and healthy, although rather ugly to look at. I didn't puree any of it. It's easy to make in the slow cooker too.

Ingredients
- 3 servings
- 3 cups chicken broth
- 1/2 cup Puy or other french lentils, picked over and rinsed
- 1 medium carrots, peeled and finely diced
- 1/2 small onion, finely chopped
- 1 celery stalks, finely diced
- 1 1/2 tablespoons uncooked arborio rice
- 1 clove minced garlic
- 1/2 teaspoon herbs de Provence or dried thyme
- salt and freshly ground black pepper, to taste

Preparation
Step 1
* *Combine* broth, lentils, carrots, onion, celery, rice, garlic, herbs de provence and pepper in a slow cooker. *Cover and cook* on low for 8 hours or on high for 4 to 5 hours.
* *Remove* 1-1/2 cups soup and puree in a food processor or blender until almost smooth. *Stir* pureed soup back into the slow cooker. *Season* to taste with salt and additional pepper, if needed.
* *Divide* among 4 bowls and serve. *Garnish* each serving with a couple of tablespoons of homemade yogurt that has been mixed with some ground cumin, chopped coriander and grated lime rind.
