  • 1 c. flour
  • 1/2 tsp. salt
  • Dash of pepper
  • 2 qt. water or broth
  • 1 tsp. salt
  • 2 Tbs. butter, melted

Step 1

Mix eggs, milk, flour, 1/2 tsp. salt and the pepper. (Batter will be thick.) Heat water and 1 tsp. salt to boiling point in a Dutch oven. Press the batter through a colander (preferably one with large holes) or a spatzle maker a few tablespoons at a time into the boiling water. Stir once or twice to prevent sticking.
Cook until dumplings rise to the surface and are tender, about 5 minutes. Drain. Pour margarine or butter over the dumplings. Serve with sauerbrauten, meatballs, chicken or sauerkraut.
