Ingredients

  • For Rub:
  • 1 rack baby back ribs
  • Kosher Salt
  • 1/2 cup orange juice (no pulp)
  • 1/2 cup prepared Margarita mix
  • 1/3 cup honey
  • 1/3 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp espresso powder or instant coffee (freeze-dried)
  • 1/2 tsp cayenne powder
  • 5 parts brown sugar
  • 3 parts chili powder
  • 1 part garlic powder
  • 1/2 part ground thyme
  • 1/4 part cayenne
  • 1/4 part allspice

Step 1

Rinse ribs and pat dry with paper towel. Place on large sheet of aluminum foil that can be folded up keeping liquid in. Coat both sides of ribs with spice rub. Place ribs, meat-side down on foil and fold in sides first and then the ends up, sealing the packet. Put in roasting pan and refrigerate for 6-12 hours, flipping it over once.

Preheat oven to 350F.

Remove packet from the refrigerator and open one end. Pour in the orange juice and Margarita mix. Reseal the packet, moving it back and forth to distribute the liquid evenly.

Place packet back in the centre of the roasting pan in the middle of the oven. After 1 hour, reduce temperature to 250F and cook until tender, approximatley 2 hours.

Remove pan from oven, unroll one end of the packet, carefully drain all juice into a saucepan. Add honey, ketchup, Worcestershire sauce, espresso powder and cayenne to saucepan.

Bring mixture to a boil, whisking frequently until reduce to a glaze. Remove from heat.

Remove ribs from packet and cut into four equal sections. Place ribs on broiling pan, meat side up, brush with the glaze, and broil for 2-3 minutes. Reglace and repqest until the ribs are a dark mahogany colour. Flip the ribs bone side up, glaze and broil a minute longer.

Cool for a couple of minutes and serve.
