  • 2 Tablespoons dry yeast
  • 1/2 ½ cup warm water
  • 1 cup warm water
  • 2/3 cup sugar
  • 3 Tablespoons potato flakes
  • 3/4 ¾ cup sugar
  • 3 Tablespoons potato flakes
  • 1 cup warm water

Step 1

To make starter: (Or you can use starter from someone who already makes the bread and skip to feeding the starter.)
Mix: 2 Tablespoons dry yeast and ½ cup warm water
Add: 1 cup warm water, 2/3 cup sugar, and 3 Tablespoons potato flakes
Let sit for one day then refrigerate for 2 days before feeding or using.


To feed:
Each time you feed your starter you need to take some out to make bread, give away, or discard. I don’t allow my starter to get any larger than 1 to 1 ½ cups to feed. It is better to throw some out than to get too large.

To feed starter, remove starter from refrigerator. Feed above ingredients. Cover loosely and allow to sit out at room temperature for about 8 hours. Do not cover air-tight. (I keep mine in a quart jar and put a Ziploc bag over it.) After sitting out for 8 hours it will be bubbly on top. Remove starter you need for bread and put remaining started in refrigerator (loosely covered) for 3 to 7 days until you feed it again.
