Ingredients

  • 3/4 ¾ cup kosher salt, plus 1 tsp.
  • 3/4 ¾ cup light brown sugar, plus 1 tsp.
  • 3/4 ¾ cup white vinegar
  • 3 tbsp. dry barbecue seasoning
  • 2 large bone-in, skin-on chicken breast halves, about 2¼ lbs

Preparation

Step 1

. Combine 8 cups of water, ¾ cup each of salt, brown sugar, vinegar and 1 tbsp. of barbecue seasoning in large plastic container to create a brine.

2. Add chicken to container and refrigerate for 2 to 4 hours.

3. Preheat oven to 350°.

4. Remove chicken from brine and pat dry.

5. Combine remaining salt, brown sugar and barbecue seasoning and rub on chicken.

6. Place chicken in roasting pan, add 2 tbsp. water to bottom of pan, and roast for 45 to 50 minutes.

7. Rest pan on cutting board for 5 minutes. Slice chicken and serve.
