Fruit Tempura

Experiment with a variety of fruits, but NOTE that especially juicy fruit, e.g., pineapple, watermelon, etc. may not work. The batter has a tendency to slide off the fruit.

- 1 cup flour
- 1 Tbsp sugar
- 1/2 tsp salt
- 2 eggs
- 1 cup water
- 1 Tbsp cornstarch
- 1/2 tspo baking powder
- Dasj pf comma,pm
- Peanut or salad oil

Step 1
Halve your peaches, apricots, slice. Peel, pare, half, core. Peel bananas, etc. Try any fruit.
Combine all ingredients except oil and beat until well blended. Set your control to 360 degree. Add oil, heat.
Dip fruits into batter to coat evenly. Allow excess to flow back into bowl. Dip fruit into oil. Cook 3-5 minutes, until golden brown. If cooking other than in a fondue pot, lift out of the oil with a slotted spoon, place on rack or towel to drain.
These may be served sprinkled with powdered sugar (while hot but after draining), with bottled syrup, or plain.
