Ingredients
- Dressing:
- 1 pound salt cod
- 3 tomatoes, sliced
- 1 head lettuce, turn into pieces
- 1 onion, thinly sliced into rings
- 1 bunch watercress, cut into 1 inch pieces
- 1 pound potatoes, boiled, peeled, and thinly sliced
- 2 hard boiled eggs, peeled and thinly sliced
- 1/2 cup oil
- 1/2 cup soy sauce
- 2 tablespoons wine vinegar
- 1 teaspoon salt

Preparation
Step 1
To prepare codfish: Soak salt cod in cold water at least 12 hours or overnight, Changing water 2 or 3 times. Drain, rinse, and place in a pan. Add water just to cover and simmer, covered for about 30 minutes. Drain; flake into small pieces, removing any skin and bones. Cool and refrigerate for at least 2 hours.
*To assemble salad*:
Line a large platter with lettuce leave sand watercress. Place codfish in center and surround fish with alternate slices tomato, onion, potato, and egg slices. Pour dressing over salad and serve at once.
