- 40 grams meringue powder
- 5 grams cream of tartar
- 210 grams warm water
- 1125 grams icing sugar

Step 1
Mix meringue powder, cream of tartar, and water with a hand whisk until foamy. Attach a flat beater to the mixer and add the icing sugar, one cup at a time. When all the sugar has been added, continue to beat for 5 minutes on low speed. Keep covered with a damp cloth or place in an air tight container.
