Garlic Roast Chicken

Ingredients
- 1 whole chicken, rinsed and patted dry, room temp.
- 1 t salt
- 1 t pepper
- 1/3 c extra virgin olive oil
- 2 t thyme
- 2 t rosemary
- 40 peeled cloves of garlic

Step 1
Place bakeing rack in center of oven and heat to 350*. Salt and pepper chicken, inside and out. place the oil in 6-8 quart dutch oven or roasting pan. heat ove medium high heat and brow the chicken. Transfer to plate. Lower the temp to meduim. Add thyme, rosemary and garlic clove to the pot. Cook until the garlic starts to brown, about 2 min. and remove from heat. Place chicken in breast side up, on top of clove of garlic. Cover tightly and place in oven. Every 20 minute, baste the chicken with the pan juices. Roast until cooke through, about 60 minutes. To crisp the chicken, uncover and place under broiler for 3-5 minutes or until browned. Carve and serve after resting 10 minutes. Roasted garlic can be whipped int mashed potatoes or served on warm bread or toast.
