Roasted New Potato and Green Bean Salad 1 Picture

Ingredients

  • 8 red skinned new potatoes, about 1 1/4 pounds
  • 24 whole gloves of garlic, peeled
  • 3 Tbsp extra virgin olive oil
  • 1 # green beans (stem ends removed), halved crosswise
  • 1/4 cup chopped Italian parsley
  • Coarse salt to taste
  • Freshly ground black pepper to taste

Preparation

Step 1

Preheat oven to 350 degrees.

Prick potatoes with a fork and place in a shallow roasting pan. Add garlic and toss with 1 Tbsp of oil. Place in center of oven and bake for 30 minutes.

Toss prepared green beans with 1 Tbsp of oil and add to potatoes and garlic. Rewturn to oven and bake 60 minutes more, tossing vegetables twice. Remove to a bowl.

When potatoes are cool enough to handle, cut into quarters and return to bowl. Toss vegetables with remaining Tbsp oil, parsley, salt and pepper.

Serve at room temperature.
