Ingredients

  • 8 potatoes, peeled and cubed
  • 1/2 C. butter
  • 1/2 C. all-purpose flour
  • 8 C. milk
  • 1/2 lb. sour cream
  • 1/2 C. shredded cheddar cheese
  • 1/4 C. chopped onion
  • salt to taste
  • ground black pepper to taste
  • bacon bits (optional)

Directions

Microwave potatoes 7-10 minutes. While microwaving potatoes, melt butter, add flour and milk. Heat and add sour cream. Mix 1/2 C. cheddar cheese, onions, salt and pepper to taste. Add potatoes, cook medium for about 5 more minutes. Top with bacon bits and additional grated cheddar cheese, if desired. Makes 8 servings.
