  • 2 1/2 cups flour
  • 2 tsp. baking powder
  • 1/2 tps. baking soda
  • 1/2 tsp. salt
  • 1/2 cup milk
  • 1/2 cup oil
  • 1 tsp. vanilla
  • 1 stick butter,(8 tbs.) softened
  • 1 cup sugar
  • 3 eggs

Step 1

Preheat the oven to 350 degrees. Line 24 muffing cups with paper inserts.

Whisk together the flour, baking powder, baking soda, and salt in a medium bowl. Combine the milk, oil, and vanilla in a 2 cup measuring cup.

In another bowl, cream the butter and sugar until creamy, light, and fluffy, about 3 minutes.

ADd the eggs, one at a time, beating well after each addition. Reduce speed and add the flour mixture alternately with the milk in batches, beginning and ending with the flour mix.

Bake the cupcakes until the centre comes out clean (15-20 minutes).
