Ingredients
- 1 tsp. canola oil
- 1/2 cup sliced mushrooms
- 1 egg
- 1/2 cup tomato puree
- 1 tbsp. chopped fresh basil or oregano
- 1 oz. part-skim mozzarella, shredded
- pinch fresh ground pepper

Preparation
Step 1
In small, non-stick pan, heat oil over med-high heat. Add the mushrooms and saute about 5 mins. Transfer to a plate. In bowl, stir together egg, tomato puree, basil, cheese and pepper. Pour into pan and cook about 5 mins., lifting edges to allow uncooked egg to run underneath, until almost set. Sprinkle mushrooms over half of omlette. Using spatula, fold over other half and cook 1 min.
