Meat Filled Stuffed Peppers

Ingredients
- Preheat the oven to 375 degrees. Oil a baking sheet that will fit the peppers snugly. Stem over boiling water for 10 minutes:
- 4 bell peppers
- Heat in a large skillet:
- 2 tbs. oil
- Add and sauté over medium heat until beef is lightly coloured, about 10 minutes:
- 8 oz. ground beef
- 1/2 ½ onion, finely chopped
- 1/2 ½ tsp. dried thyme
- Add:
- 1 cup hot cooked rice
- 1 ripe tomato, peeled, seeded, and finely chopped
- 2 large eggs, lightly beaten
- 1 clove minced garlic
- 1 tsp. dried basil
- Salt, pepper, and red pepper flakes to taste

Step 1
Fill the peppers with the meat mix and set in a baking dish. Combine and sprinkle over top:
½ cup breadcrumbs
1 tbs. oil or melted butter
Bake until the peppers are tender, about 25 minutes. If necessary brown the tops under the broiler.
