Ingredients

  • Preheat the oven to 375 degrees. Oil a baking sheet that will fit the peppers snugly. Stem over boiling water for 10 minutes:
  • 4 bell peppers
  • Heat in a large skillet:
  • 2 tbs. oil
  • Add and sauté over medium heat until beef is lightly coloured, about 10 minutes:
  • 8 oz. ground beef
  • 1/2 ½ onion, finely chopped
  • 1/2 ½ tsp. dried thyme
  • Add:
  • 1 cup hot cooked rice
  • 1 ripe tomato, peeled, seeded, and finely chopped
  • 2 large eggs, lightly beaten
  • 1 clove minced garlic
  • 1 tsp. dried basil
  • Salt, pepper, and red pepper flakes to taste

Step 1

Fill the peppers with the meat mix and set in a baking dish. Combine and sprinkle over top:

½ cup breadcrumbs
1 tbs. oil or melted butter

Bake until the peppers are tender, about 25 minutes. If necessary brown the tops under the broiler.
