Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 3 parsnips
  • 1 large onion
  • 6 medium carrots
  • 2 tablespoons olive oil
  • 1 tablespoon kosher salt
  • Quinoa dressing
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon honey
  • 2 teaspoon fresh Italian parsley
  • 1 clove garlic
  • salt and peper to taste

Preparation

Step 1

1. Bring the water or broth to a boil. Add some salt and the quinoa, stir, cover, and cook for approximately 20 minutes or until all the water is absorbed.

2. Meanwhile, heat the oven to 400F. Chop the onion. Slice the carrots and parsnips lengthwise into long quarters. Then slice into chunks. Toss the onion and vegetables with the olive oil, salt, pepper. Cover a baking sheet with parchment paper and spread the vegetables in an even layer. Roast until golden brown, about 15 minutes.

3. When the quinoa is done, toss it with the vegetables.

4. Mix the dressing and drizzle over Quinoa dish.
