  • 4 grouper fillets
  • 1/2 tsp. salt
  • 1/2 tsp. ground black pepper
  • 1 pint grape tomatoes
  • 1/2 cup sliced shallots
  • 1 tsp. chopped fresh rosemary
  • 1 tsp. minced garlic

Preparation

Step 1

1. Preheat grill to medium high heat. Cut 4 pieces of aluminum foil twice the size of each fillet. Place each fillet on a piece of foil. Sprinkle fish evenly with salt and pepper. Top each evenly with tomatoes, shallot, rosemary, and garlic. Grill for 8 minutes or until fish flakes easily when tested with a fork.
