Ingredients

  • 1 tablespoon butter/olive oil
  • 1 large onion, chopped
  • 1 1/2 cups half & half
  • 1/2 cup chicken broth
  • 2 tablespoons all-purpose flour
  • 2 tablespoons cornstarch
  • 1 1/2 teaspoons paprika
  • 1 bag frozen mixed vegetables
  • 4 cups cooked, shredded chicken
  • salt & pepper to taste

Preparation

Step 1

Preheat oven to 400 degrees.

In a large skillet melt butter over medium heat; add onion. Saute for 5 minutes; until onion is transparent.

Whisk together half & half, broth, flour, cornstarch and paprika; add to onion mixture and whisk until thick. Add mixed vegetables and chicken to cream mixture.

Pour into individual pie pans and bake until bubbly and crust is browned (approx. 20 - 30 minutes).
