- 175 grams cake and pastry flour
- 250 grams eggs
- 175 grams sugar
- Chocolate Sponge Cake
- 160 grams cake and pastry flour
- 15 grams cocoa
- 250 grams eggs
- 175 grams sugar
- 25 grams melted butter

Preparation
Step 1
Preheat oven to 390 degrees.
Sift flour. Place eggs and sugar in a bowl and place bowl into a warm water bath and gently heat until the sugar and eggs reach 100 degrees. On medium high heat whip up the egg mixture until beaters trail remains in the batter, about 10 minutes; the batter should be thick and fluffy.
Add in half of the flour, gently fold in by hand, and then fold in the other half of the flour. Do not overwork the batter. Pour batter into prepared pans.
Bake for 15-20 minutes or until cntre springs back.
For chocolate cake sift flour and cocoa together.
