Ingredients
- 3 tbs. butter
- 4 sliced chopped bacon
- 1 chopped onion
- 1 medium carrot, finely chopped
- 1 stalk finely chopped celery
- 2 tbs. oil
- 2/3 lb. ground meat
- 1/2 ½ cup white wine
- 2 cups beef stock
- 3 tbs. tomato paste
- 1 tsp. oregano
- nutmeg, salt, and pepper
- 1 cup heavy cream

Step 1
Melt the butter, sauté the bacon, onion, carrot, and celery; cook stirring 10 minutes; set aside. Heat the oil in a pan and brown the meat, pour off the fat. Stir in the wine and cook over high heat until most of the liquid had evaporated. Stir in stock, past, spices, and bacon mix. Simmer partially covered until mixture is reduced to a thick sauce, 40 – 60 minutes. Add the cream slowly making sure not to boil the mixture. Top with parmesan cheese.
