Ingredients
- Seasoning Mix :
- 4 Tablespoons Liquid Smoke
- 1 cup fine sea salt ( or salt )
- 1/4 cup black pepper
- 1/4 cup garlic powder
- 3-4 pound Boston Butt pork roast
- 1 large sliced yellow onion
- 1 cup water
- 3 bay leaves

Step 1
Preheat oven to 350 degrees. Rinse the roast and pat dry with paper towels. Place roast on a platter and brush with 2 Tablespoons of the Liquid Smoke per side, then apply 2 Tablespoons of the Seasoning Salt per side. Place the roast in a dutch oven or a similar roasting pan with a cover. Spread onion slices across top of roast. Add the water and bay leaves. Bake uncovered for 1 hour, then cover and bake another 1 1/2 hours or until a meat thermometer inserted into the center of the roast reads 170 degrees. ( Note that 2 large sweet potatoes can be baked simultaneously during the last 1 1/2 hours of baking the roast.)
