"When I was doing Weight Watchers and the boys were home, I got really tired of fixing 3 sets of meals each night. When I came upon this recipe - I just didn't tell them this was WW and to this day they still don't know. When the boys come home now - this is one dish they will request. Super fast & easy to fix on work nights. 4 oz. = 4 WW points (without rice) *Note - in response to some reviews that experience the sauce being too runny or thin...extend the reduction time (after removing lid). It may take another 5-10 minutes to thicken and have the consistency you desire. Do not use regular Coke as this will turn out too sweet. I promise--you cannot taste the Diet Coke."

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 (16 ounce) jars salsa ( your choice of heat)
  • 1 (12 ounce) cans Diet Coke ( DO NOT SUBSTITUTE ON THIS ITEM)
  • 1 limes, juice of, fresh squeezed

Preparation

Step 1

In 12 inch skillet, cook chicken over medium high heat in UNSEASONED pan (do NOT spray with PAM or add any oil or butter). Sprinkle lightly with salt and pepper to taste. Chicken will stick a bit to skillet when turning but that is ok. Cook till just brown- you want a bit of color.

Add the entire jar of Salsa and the can of Diet Coke. Reduce heat to medium low- and simmer for approximately 15-20 minutes, covered. Remove lid, turn chicken and continue to simmer until sauce has thickened to desired consistency.

When ready to serve, squeeze juice from 1 fresh lime over the chicken.

I serve this over yellow rice (I just add turmeric to my rice when cooking - adds nice bright yellow color!).

Wow, just made this and it was awesome. Didn't have a lot in the pantry and I usually do a chicken and sausage with a jar of salsa in the pressure cooker but no sausage today. I used drums since that's what I had, 24 ounces of medium salsa and diet Pepsi. You can taste the sweetness of the soda and that makes this dish different. I loved it. I"m glad I used 24 ounces of salsa since I like it a little more liquid over my rice.

This an awesome way to make the lowly chicken breast. Not sweet, no fat and lots of flavour. I only made half the recipe, as there is only the 2 of us. I think next time I won't reduce the sauce so much, so we have a bit more for the rice. The lime is a nice little flavor addition. :)

We don't drink Diet Coke, just Diet Pepsi and although the recipe said no substitutions I figured "What the heck!" and made it with a can of diet Pepsi. OH MY GOODNESS. This is our new favorite recipe. I was incredibly skeptical of what the Diet Pepsi would do to the recipe, but it was great. The Salsa and the soda, made it sweet, but not too sweet. (Next time I am going to try it with just half a can so the sauce will be thicker and the sweetness could be lessened.)

My step-son and I really really liked this, hubby not so much, but he's pretty picky and hard to please. This was easy to fix, and although we didn't get our sauce to thicken up, it still tasted great over the rice. I did add the turmeric to the rice and it added a nice addition to a great recipe. Excellent!! Easy, quick and amazing! While we were eating we were wondering how we could use the same method with other meats and decided....why/! Definitely a keeper that will be made again and again.

I loved this. I was busy so I put about 1/2 C of rice in the bottom of a dish and layered the chicken, salsa and diet coke over it. Then baked it all together. It was really good. Kind of sweet like a BBQ sauce but that could have been my salsa too. All I had was a black bean and corn salsa but it worked and I'll definitely keep this on hand for an easy dinner.

Wow - this one's definitely a keeper. I made 2 small changes: 1) used bone-in chicken thighs and 2) used diet coke w/ lime. This was so good and oh so easy. I will be making this one many, many times. Thanks for posting!

This really is OUTSTANDING! I am so glad I was adventurous enough to try this recipe. I was really worried about the diet soda in this recipe but you really can't taste it at all! It just adds a sweetness and not the aftertaste kind. The chicken turns out super tender too. Thank you so much for posting. This recipe is so easy yet so good. WW's give this a shot. We make this a lot, probably because we always have these 3 ingredients in the house. I usually cut it in half since it's just two of us. I let the sauce boil a few minutes after I take the chicken out and let it get good and thick. We love this with corn and rice.

This was an absolutely delicious and easy recipe! It was also very easy to modify to a smaller portion. I can eat this every night!

EXELLENT!!! Had some friends over and served this over yellow rice as suggested, and it was a hit. I love how easy this is. I did brine my chicken for 2 hours first. I have found that it results in moister and more tender meat. :-)

Wonderful flavor!! Just 3 ingredients and you have a happy dance happening in your mouth. I like my food hot and spicy. I used hot salsa by "Pace". DH thought it was too hot. Next time I will use the Medium to make him happy. I used only 3/4 of the can of diet coke based on other reviews. This helped reduce the sauce mixture. After removing the lid I cooked the sauce for 10 mins on med-low and another 10 mins on med-high. I had way too many rice dishes this week so used noodles instead. Great dish! Thanks, for posting CindiJ. Update: 2/6/07 Made again and this time I used a medium salsa and DH said "This $%#*@ (stuff) is great! I, even forgot how tasty it really is. The whole time I was shoving it into my mouth (opps! sorry, that was very unlady like) while I was putting the tiny morsels into my mouth I was thinking how I had forgotten what a wonderful flavor dish was. This was OK, although I was not totally convinced. My husband liked it, though. I think it needs some freshness- some fresh coriander or parsley would really lift this dish. We don't have such a large jar of salsa here, our standard jars are 300g (10 1/2 oz) so I reduced the cola to just shy of 1 cup. I used 500g chopped chicken breast. I don't know if it is because our Australian salsa isn't like yours, but I had to add some salt and some chilli (salsa too mild). I also added 1/4 a red capsicum and served it over the yellow rice. I added the tiniest bit of coriander, but my plant's nearly dead so it was only about 1/2 tsp but it seemed to help. I also cooked it mostly uncovered, and the sauce thickened nicely, no need to add cornflour unless you are impatient. I think next time I'll cut down on the cola and add some stock. It made enough for 3 on the reduced amount.

It was GREAT! I made it twice this week. First was a test drive then I made it for my sister that came for a visit and whom I hadn't seen in 8 years. She loved it. And she took the recipe home with her. Very easy to make. I found that "Newmans Own All Natural Chuncky Medum Salsa" was much better then the other brand I used. Thank's for a great and easy recipe!

I've been a successful WW follower for over 5 years. I'm always on the look for low calorie foods that don't taste like it. This one is a real winner. I used boneless skinless chicken thighs because they were on sale. Didn't have a lime so it probably didn't have the zing it would have but we still loved it. Update..I've given the recipe out to a few and everyone has loved it. Can't believe how good it eas for being such a simple recipel

This is an OMG recipe! It fits the bill for anyone wanting a healthy meat entree. It is easy to fix and the taste is so-o-o good. I fixed this with a Thai Rice-a-roni side and mixed asian frozen veggies in a light sauce. Very tasty and a change for my ordinary evening meals. This would work well with center cut pork chops, too. Thanks for a great recipe.

Made this for tea tonight using a jar of Hot Salsa - as himself likes the hot stuff. Forgot to add the lime juice though (and I'd been out especially to buy one! Doh!)

We thought it was REALLY tasty... Himself looked at me askance and said "You SURE this is healthy?"

I'll be making this again and again - with a mild salsa when "the family" come for tea and with the hot stuff when it's just me and himself.

Hopefully I'll remember to use the lime at some point!

We'd had rice yesterday so I decided to serve it with pasta - found one in the shape of tiny little stars (Stelline) Can't wait to serve this to my Granddaughter... she loves her pasta but she probably won't care how this one tastes if it's full of little stars! (( ',' ))

Served it with mashed potatoes and green beans and corn for lunch and everyone was IN LOVE with it

Wow! This is great!! I was curious about the 'diet coke' but it really blended right in. Made exactly as stated, but I ended up halving the sauce (as I used 2 chicken thighs). I wouldn't change a thing - it was perfect! The sauce reminded me of a favourite of mine, my Mom's Cabbage rolls. Sauce & chicken was excellent. Thanks for posting :-)

I used chicken thighs and it was super delicious. My husband said 'this recipe is a keeper.' Quick and easy and very tasty.

This was pretty good. Used Diet Coke and medium Pace salsa. I had to thicken the sauce a bit with some cornstarch, but the flavor was good and my hub had seconds! Thanks for the recipe!

Cindi this is a smash hit here in northern wisconsin i can use the words that the rest of the family used but i will say this it is fast very easy and the taste is out of this world I know we will be having this meal again and again my wife and best friend / roommate love it they cant get enough of it. I didnt use boneless i did however use legs and thighs cant wait to try more :)

Great recipe! Healthy, quick, and yummy!! I made it over brown rice and it tasted great, even when I ate the left overs for lunch the next day.

Well I made this again and it was good. I actually used the diet coke as suggested and decided that I like the taste with regular pepsi better. I did add the small amount of cornstarch again like I did the first time to get the thickness that I like. This is a very easy, quick and tasty chicken recipe.

WE loved it! I did it with home-made salsa and without the diet coke and thinned out the sauce with a bit of water and served it with pasta. Good stuff!

We loved this! We did use a chunky black bean salsa so the sauce cooked down pretty quickly. The chicken was juicy and very, very good. DH loved it.

This is just like the cola chicken recipe, except use Salsa instead of catsup. I really liked the WW Cola Chicken.....and tried it with 'ribs'and 'meatballs'....both were tasty. Served meatballs over rice. Can't wait to try the Salsa Chicken.

Loved the flavor but seemed really runny, had to put over lots of rice. I prefer this recipe with one chicken breast cut up, cooked till no longer white, then add the salsa and diet coke, bring to boil, then add 1 1/2 cups uncooked rice, simmer until liquid is absorbed. Feeds as many, less calories, better price on a budget and rice has even better flavor when cooked in
