- 2 Tbsp butter
- 2 green onions, chopped
- 1 Cup finely diced raw potato
- 3 eggs lightly beaten
- Salt and pepper
- 1/4 cup milk
- 1/4 cup grated Parmesan or Romano cheese

Step 1
Melt butter in heavy 10" skillet. Add onion and potato. Cook over low heat, stirring and turning often, for 8-10 minutes or until potato is golden brown.
Season eggs with salt and papoper and add milk and cheese. Pour over potato.
Cook gently 8-12 minutes or until omelet is browned on bottom and can be turned aover in pan.
If not adept at flipping an omelet with a widebladed spatula, place a plate over pan, invert, then slide omelet back into pan.
Cook gently until browned on second side. Turn out on warm plate and cut into wedges.
