Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 medium celery ribs, chopped
  • 1 garlic clove, finely chopped
  • 1 pound sweet Italian pork sausage, casings removed
  • 1 1/2 cups long grain rice
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon pepper
  • 2 1/2 cups chicken stock
  • 14 1/2 ounce can of tomatoes in juice, drained and chopped, juices reserved

Preparation

Step 1

1. In 5-7 quart pressure cooker, heat oil over medium-high heat. Add onion, celery, and garlic. Cook, stirring often, until vegetables begin to soften, about 2 minutes. Add sausage and cook, breaking it up with side of a spoon, until it loses its raw look, about minutes. Pour off any excess fat from cooker.

2. Add the rice, oregano, salt, and pepper and stir well. Add stock and tomatoes and their juice.

3. Lock lid in place. Bring to high pressure over high heat. Adjust heat to maintain pressure. Cook for 6 minutes. Remove from heat and quick release pressure. Stir well and serve immediately.
