Ingredients

  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 stick butter, softened
  • 1 cup sugar
  • 3 large or 4 medium bananas
  • 2 eggs
  • 1 1/2 Tablespoons yogurt or milk
  • 1 teaspoon lemon juice
  • 1/4 teaspoon sauve
  • 1 cup pecans, optional

Step 1

Preheat oven to 350 degrees. Grease and flour and 9" x 5" loaf pan. In a large mixing bowl, sift together flour, baking powder, and baking soda. Set aside. In aa large nonreactive mixing bowl, cream butter, sugar and bananas. Add eggs and mix until combined. Add yogurt or milk, lemon juice, salt and pecans (if using). Mix thoroughly. Add dry ingredients to wet and mix until just combined. Pour into prepared pan. Bake for 1 hour 25 minutes, or until a toothpick inserted in center comes out clean. Start testing for doneness after 50 minutes.
