Ingredients

  • 3# ground beef
  • 3 cups chopped onion
  • 3 pkgs chili seasoning mix
  • 3 6-oz cans tomato sauce
  • 2 cups water
  • 3 cans (1# each) drained kidney beans
  • (or mix kind of beans, e.g., black, cannellini)
  • 1 pkg small corn chips
  • 3/4 cup sliced, pitted black olives
  • 1 1/2 cup shredded sharp cheddar cheese

Preparation

Step 1

In heavy kettle, cook meat until it loses its red color, breaking up with a fork. Add next 4 ingredients. Stir. Bring to a boil, cover and simmer 15 minutes, stirring several times to prevent sticking.

In 4 quart casserole, about 3 1/2 inches deep, layer meat mixture with beans, corn ships and cheese.

Bake in slow oven 50-60 minutes at 325 degrees.
