Ingredients

  • 1/2 lb. lean beef, diced
  • 1 Tbsp. oil
  • 1/3 cup onion, diced
  • 1 clove garlic, minced
  • 2 tsp. chili powder
  • 1/2 tsp. oregano
  • 1/2 tsp. salt
  • 1 can green chilies, diced
  • 1 can tomatoes
  • 3/4 cup water
  • 1 1/2 cup rice, dry
  • 2 tsp. parsley
  • Cheese

Preparation

Step 1

Brown beef in oil. Add onions and garlic; saute until tender. Add chili powder, oregano, salt, green chilies, tomatoes and water. Bring to a boil. Stir in rice, cover and remove from heat. Let set 5 minutes.
