Ingredients
- 3 C. Flour
- 2 C. Sugar
- 3 Tbsp. Cinnamon
- 1 Tsp. Salt
- 1 Tsp. Baking Soda
- 1 C. Baking Oil (Canola or Vegetable)
- 3 Eggs
- 2 C. Grated Zucchini
- 3 Tsp. Vanilla
- Optional: ½ C. Nuts (Pecans or Walnuts)

Preparation
Step 1
1. Preheat oven to 350 degrees. For muffins, put baking cups in tins.
2. Combine dry ingredients and make a well.
3. Add in the rest and stir.
4. Bake in oven: for loaf bake for 1 hr to 1 hr 15 mins; for muffins bake 15-18 mins.
