MINT CHOCOLATE PARFAITS

Ingredients

• 24 large marshmallows
• 1/2 c. milk
• 1 tsp. vanilla
• 1/8 tsp. salt
• 1/4 c. cream de menthe
• 2 c. cream de cacao
• 1 1/2 c. chilled whipping cream
• 3/4 c. chocolate cookies crumbs* (approx. 14 cookie wafers)
• 2 Tbs. margarine
• 1 Tbs. sugar
• *Girl Scout mint cookies work well.

Preparation

Step 1

Combine cookie crumbs, margarine and sugar. Microwave on HIGH until margarine melts.
Put marshmallows and milk in a large casserole dish covered tightly. Microwave on HIGH until marshmallows are melted, approximately 3 - 4 minutes. Stir in vanilla, salt, dream, de menthe and cream de cacao. Let cool until thickened.
Beat whipping cream and fold in marshmallow mixture.
Layer cookie crumbs and marshmallow mixture in parfait glasses. Keep in freezer. Makes approximately six parfaits.
