Ingredients

  • 1 1/2 cups whole wheat flour
  • 3/4 cup flax seeds
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 3 ripe bananas, mashed
  • 6 tbsp. Splenda brown sugar blend
  • 3/4 tsp. lemon juice and skim milk to make 3/4 cup
  • 4 egg whites
  • 1 tsp. vanilla

Step 1

Preheat oven to 350 F. Spray loaf pan with cooking spray. Measure 3/4 tbsp. lemon juice into a 3/4 cup measuring cup and pour in milk to make 3/4 cup. Do not stir. Allow to sit 5 mins. In bowl, blend flour, flaxseed, baking powder, baking soda, cinnamon and salt and set aside. Beat egg whites and sugar. Add bananas and vanilla and beat lightly. Pour wet into dry and combine until well-mixed. Pour into pan and bake 40-50 mins.
