Ingredients
- 1 pound dried kidney beans
- 1/4 pound salt pork, cut into small pieces
- 3 cloves garlic, finely chopped
- 1/2 cup finely chopped onion
- 1/2 teaspoon dried oregano leaves
- Pinch ground cumin
- 2 cans (10 1/2 ounce) tomato puree
- 2 tablespoons chili powder
- 1 1/2 teaspoons salt
- Dash pepper

Preparation
Step 1
Cover bean with cold water; refrigerate, covered,overnight.
Next day, drain. Turn into 6-quart kettle; cover with5 cups cold water. Bring to boiling point. Reduce heat; simmer, covered, 1 hour. Drain thoroughly.
In medium saucepan, saute salt pork until crisp on all sides. Add garlic and onion; saute ntil golden--about 5 minutes.
Then stir in rest of ingredients, along with drained beans.
Simmer, covered and over very low heat, 1 1/2 hours,or until beans are tender. Stir several times during cooking.
