Italian Style Pasta Salad 1 Picture

Ingredients

  • 4 ounces spaghetti or vermicelli
  • 1 6-oz jar marinated artichoke hearts
  • 1/2 small zucchini sliced
  • 1 carrot shredded
  • Cherry tomatoes
  • 2 ounces sliced salami, cut in strips
  • 1 cup thredded mozzarella cheese
  • 2 Tablespoons grated Parmesan cheese (fresh is best)
  • 2 Tablespoons salad oil
  • 2 Tablespoons white wine vinegar 3/4 dry mustard
  • 1/2 teaspoon dried oregano, crushed
  • 1/2 teaspoon dried basil, crushed (fresh is better if you have it)
  • 1 clove garlic crushed

Break pasta in half, cook according to package directions.

Drain and set aside. Dram artichokes, reserving-marinade Coarsely chop artichoke-hearts. Halve zucchini slices. In a large bowl, combine cooked pasta, artichokes, zucchini, carrot, salami, mozzarella cheese, and Parmesan cheese I

n a screw-top jar combine reserved artichoke marinade, salad oil, vinega mustard, oregano, basil and garlic. Shake well. Pour dressing over pasta mixture; toss to coat evenly. Transfer salad to a covered container. Chill several hours. (You can also use water packed artichokes and a ready-made bottled salad dressing, such a garlic and herbs or spices and herbs.)
