Ingredients

  • ¼ pound ground pork chorizo
  • ½ cup white onions –small dice
  • 1 small Serrano pepper- finely chopped
  • 1 Tablespoon chili powder
  • ¼ teaspoon ground cumin
  • ¼ teaspoon oregano – crushed
  • 12 oz Mexican beer
  • 8 oz Jack cheese-shredded
  • 1 Tablespoon all purpose flour
  • Salt/Pepper- to taste
  • 1 Tablespoon fresh lime juice
  • Chopped cilantro and onions

Preparation

Step 1

# Heat a medium sauce pot over medium/high heat and brown chorizo, onion, and Serrano pepper
# Add chili powder, cumin, oregano and beer- simmer for 3-5 minutes
# Toss shredded cheese in flour and slowly add to chorizo- reduce heat to low - stirring to combine
# Season to taste with Salt/Pepper and lime juice
# Garnish with chopped cilantro and onions
# Serve warm with tortilla chips
