Ingredients
- ¼ pound ground pork chorizo
- ½ cup white onions –small dice
- 1 small Serrano pepper- finely chopped
- 1 Tablespoon chili powder
- ¼ teaspoon ground cumin
- ¼ teaspoon oregano – crushed
- 12 oz Mexican beer
- 8 oz Jack cheese-shredded
- 1 Tablespoon all purpose flour
- Salt/Pepper- to taste
- 1 Tablespoon fresh lime juice
- Chopped cilantro and onions

Step 1
# Heat a medium sauce pot over medium/high heat and brown chorizo, onion, and Serrano pepper
# Add chili powder, cumin, oregano and beer- simmer for 3-5 minutes
# Toss shredded cheese in flour and slowly add to chorizo- reduce heat to low - stirring to combine
# Season to taste with Salt/Pepper and lime juice
# Garnish with chopped cilantro and onions
# Serve warm with tortilla chips
